Just read about this, this morning. I think it is bizarre he has't spoke up already. What does he need to be coached up on? I made it once and was disappointed. The lack of skin in comparison to frying chicken or turkey seemed to let all the oil soak into the meat. And, beyond that, the meat was well done on the outer 1-2 inches and almost raw in the middle. To solve the problem I ended up slicing the meat after the frying and finishing it on the grill.
